You knew it was coming. Lemons are so versitile and easy to work with, and they’re so tasty which is why they’re my favorite food. Here are six of my favorite recipes that have lemons as a staple ingredient. (With no long introduction about how blah blah blah lemons inspired me blah blah blah I studied abroad blah blah blah. You’re welcome.)
1. Lemon Sour Cream Pie
This one’s a bonus because it also contains my other favorite food, sour cream. I’ve posted this link before in my newsletter, but I just love this recipe so much.
2. Lemon Garlic Spinach
I started making this in Boston with Alex who introduced me to it. It’s so delicious and is so incredibly healthy and easy to make. You just put some butter, garlic, spinach, and lemon in a pan (preferably in that order), and that’s it. I also love to add some shrimp in there. I portion the ingredients just based on how much I want, but if you don’t trust your judgement…
3. Lemon Rosemary Salmon
I never realized how easy salmon was to make, and you can make it into a really aesthetic dish.
4. Strawberry Lemon Shortcake
Shortcake is my favorite type of cake ever. I made it for my birthday (and foolishly didn’t take any pictures), and it was spectacular.
5. Lemon Poppyseed Muffins
Homemade muffins are so much better than boxed, and they’re healthier because they don’t have crazy preservatives that come with boxed/premixed muffins. I like to make this keto/low-carb/paleo recipe. It’s the most “regular”-tasting one I’ve tried.

6. Lemon Water
Whether if you want it cold or hot, I love lemon water so much and it’s so good for you. Lemons are a natural antioxidant and have lots of Vitamin C, too.
